Ristoro Italiano Recipes
Mediterranean Salad
In this order: Arugula, Ristoro Italiano EVOO D.O.P., some drops of Aceto Balsamico di Modena, Parmigiano Reggiano shavings.
Bruschetta
For 4 persons: 8 tablespoons of Ristoro Italiano EVOO D.O.P. 1 baguette, a clove of garlic, cherry tomatoes, basil, salt.
Slice the baguette and place the slices on a baking sheet in the ovenat 390 F until the slices are crunchy.
In the meantime, cut the tomatoes and basil into small pieces.
Rub the garlic into each slice of bread, then put the tomatoes and basil on each slice. Add a pinch of salt and a drizzle of Ristoro Italiano EVOO on top.
Pani Cunzatu
(Sicilian original recipe of seasoned bread)
Take a warm baguette, take half of it and slice it in two. Put on top of one of the slices plenty of Ristoro Italiano EVOO D.O.P., a pinch of salt, two anchovies in oil, 4 cherry tomatoes (in very small pieces!), a pinch of oregano, a few slices of old cheddar cheese. Put the other half of bread on top and crush it well against each other before eating.
The vegetable Pinzimonio is a starter (or side dish) and it is light, fresh and very healthy. Cut several raw vegetables into sticks or pieces to dip in a sauce (Pinzimonio, in fact). The sauce is made with Ristoro Italiano EVOO D.O.P., salt and a few drops of lemon juice. Use a fork to whip the sauce and obtain an emulsion.
Orange Salad
For 4 persons:
Peel and slice 4 ripe Navel oranges. Place the orange slices on a plate with some salt on top, one teaspoon of Ristoro Italiano EVOO D.O.P. and eventually a pinch of chili powder.
